Leftover Rice Pudding


1 cup Brown Sugar
1 stick butter
2 TBS Vanilla extract
3 cups milk
4 cups cooked Rice
Raisins (optional)
Cinnamon (optional)

  • Combine everything but the rice over a medium heat until everything is dissolved. (Leave raisins until the end and use a whisk for easy mode.)
  • Once all the flavoring is combined, add the rice to the pot and allow to simmer for 1 hour.
  • Enjoy hot or allow to cool (covered) for about an hour before transferring to Tupperware or Gladware or whatever-ware and refrigerating.
  • Date it and put it in the fridge and congratulate yourself for not wasting all that delicious rice.
