Artichoke Dip


Ingredients:

  • 1/4 cup non-dairy milk, like macadamia nut or soy
  • 1/4 cup sunflower oil
  • 1/4 tsp salt
  • 2 cloves garlic
  • 2 cups artichokes, drained

Method:

  • Bring non-dairy milk and oil to room temperature.
  • Put non-dairy milk in a food processor that has a pour spout/opening.
  • Start food processor.
  • Slowly drizzle sunflower oil into the “milk.” The two liquids should emulsify effortlessly this way.
  • Add salt after all oil is added to the food processor.
  • Add garlic to the food processor.
  • Add artichokes to the food processor.
  • Turn off the food processor once all are well-combined.
  • Serve immediately or chill.

Serves: 4

We suggest eating this with turnip chips.

This counts as a fat as the carbs are extremely low. Protein is pretty negligible.

Remember: food is not immortal. Consume within a day or two.
